Extra Oro by Grandi Molini Italiani combines the addition of vitamin C with considerable strength, making it the ideal product for medium and long leavening times. The flour features excellent stability when leavening, avoiding the need for improving agents. It can be used to make biga preferments with 14/16 hour leavening time at a controlled temperature, and is especially recommended for small loaves made from dough requiring high levels of hydration.
