Integrale Oro by Grandi Molini Italiani is a flour with good stability and absorption, and in addition to a high concentration of vitamins and fibre, also features high strength, making it suitable for the production of biga preferments (13-14 hours) and sponge doughs in general. It can be used to make ciabatta bread, but is ideal especially for small loaves.
Suitable for bakers.
