Rimacinata Oro by Grandi Molini Italiani achieves extraordinary levels of extensibility, hydration and stability when leavening, thanks to a careful selection of special grains.
Specifically, it is suitable for breads whose dough requires high levels of hydration, even up to 90%, such as ciabatta and other smaller loaves or rolls. It is also excellent for blending with other flours, and is added at around 15-20% to “colour” the crumb and give a golden crust.
